Where the numbers come from
Food composition — USDA FoodData Central (SR Legacy), by fdcId per food.
Vitamin K2 (MK-4) — Elder, Haytowitz, Howe, Peterson & Booth, J Agric Food Chem 2006;54:463–467. That study measured MK-4 only, so long-chain menaquinones in aged cheese are not represented and cheese is understated here.
Iodine — USDA/FDA/ODS-NIH Database for the Iodine Content of Common Foods, Release 4. Foods absent from that database carry no figure rather than a guessed one.
Biotin — Staggs et al., J Food Compost Anal 2004;17:767–776, the assay behind the NIH ODS tables.
Targets and upper limits — NASEM Dietary Reference Intakes. Where a target departs from the DRI (sodium, potassium, vitamin C, vitamin E, K2), the report says so next to that nutrient and explains why.
Energy — Mifflin-St Jeor with standard activity factors.
Eggshell calcium — Schaafsma & Beelen (1999); Omelka et al. (2021): 401mg elemental calcium per gram, absorbed as well as or better than purified calcium carbonate.
